BRINJAL & BLUE BERRY HALWA /

INGREDIENTS

4 Portions: Time: 70 Minutes
Brinjal : 400 gms
Khoa : 100 gms
Ghee : 75 gms
Cashew nut : 50 gms
Blue berry : 30 gms
Cardamom powder : 5 gms
Blue berry juice : 100 ml
Milk : 500 ml
Sugar : 150 gms
Raisins : 40 gms
Almonds : 30 gms

METHOD

  • Blanch brinjal and remove the skin. Puree it.
  • Heat ghee in a kadai. Add brinjal puree & saut√© it for 5 mins. Add milk, blue berry juice, almond paste & sugar and boil till it becomes dry.
  • Add khoa and fry till fat comes out.
  • Add cardamom powder.
  • Serve hot garnished with blue berry, cashew nut & raisins
