(150 gm) 1 cup Naturipe Farms™ blueberries, washed and drained
(240 gm) 2 cups flour
(100 gm) 1/2 cup sugar
(12 gm) 1 tablespoon baking powder
(03 gm) 1/2 teaspoon salt
(4 gm) 1/2 teaspoon ground ginger
(120 gm) 1/2 cup milk
(56 gm) 1/4 cup frozen lemonade concentrate
1 egg
(73 gm) 1/3 cup vegetable oil
Cinnamon sugar to dust


  • Preheat oven to 400°F. Prepare a muffin tin with muffin papers or by lightly greasing the tin. In a large bowl, mix together all dry ingredients. In a small bowl, combine milk, lemonade concentrate, egg and oil. Stir together wet ingredients with dry, stirring just until combined. Do not overmix. Gently stir in blueberries. Spoon batter into prepared muffin tin and sprinkle with cinnamon sugar. Bake for 20 minutes until lightly golden.
Tip : These muffins are great hot, but can also be enjoyed cool or can be frozen for future use.
