Brinjal & Blue Berry Halwa

Ingredients

4 Portions: Time: 70 Minutes
Brinjal 400 gms
Khoa 100 gms
Ghee 75 gms
Cashew nut 50 gms
Blue berry 30 gms
Cardamom powder 5 gms
Blue berry juice 100 ml
Milk 500 ml
Sugar 150 gms
Raisins 40 gms
Almonds 30 gms

Method

  • Blanch brinjal and remove the skin. Puree it.
  • Heat ghee in a kadai. Add brinjal puree & sauté it for 5 mins. Add milk, blue berry juice, almond paste & sugar and boil till it becomes dry.
  • Add khoa and fry till fat comes out.
  • Add cardamom powder.
  • Serve hot garnished with blue berry, cashew nut & raisins
