Brinjal & Blue Berry Halwa

Brinjal | 400 gms | |
Khoa | 100 gms | |
Ghee | 75 gms | |
Cashew nut | 50 gms | |
Blue berry | 30 gms | |
Cardamom powder | 5 gms | |
Blue berry juice | 100 ml | |
Milk | 500 ml | |
Sugar | 150 gms | |
Raisins | 40 gms | |
Almonds | 30 gms |
Method
- Blanch brinjal and remove the skin. Puree it.
- Heat ghee in a kadai. Add brinjal puree & sauté it for 5 mins. Add milk, blue berry juice, almond paste & sugar and boil till it becomes dry.
- Add khoa and fry till fat comes out.
- Add cardamom powder.
- Serve hot garnished with blue berry, cashew nut & raisins
